Potato Salad with Bacon and Miso

Ingredients

  • Potatoes 3.5 oz ≒ 100g
  • Water
  • 2 boiled eggs
  • Pickles (chopped well) 0.35 oz ≒ 10g

  • Mayonnaise 0.85 oz ≒ 24g
  • Mustard 0.21 oz ≒ 6g
  • Cane sugar 0.14 oz ≒ 4g
  • Salt 0.11 oz ≒ 3g
  • Black pepper (a pinch)
  • Miso 0.35 oz ≒ 10g

 

  • Sliced bacon 1.1 oz ≒ 30g
  • Paprika
  • Parsley

Instructions

  1. Put the potatoes with skin in a pan. Pour enough water to cover. Heat the pan. Boil long enough until the potatoes are softened. It is ready when a bamboo skewer passes the potatoes quickly. Get rid of the hot water.
  2. Peel off the potato skin. Cut into 2cm cubes.
  3. Add the boiled eggs and mix.
  4. Sauté the bacon until firmly colored without oiling in the frying pan.
  5. Serve in a bowl, add bacon, paprika powder and parsley.
